Nutty Vegetable Pilaf

Ingredients
  Vegetable oil 1 Tablespoon
  Coarsely chopped broccoli 2 Cup (32 tbs)
  Carrots 2 Medium, julienned
  Onion 1 Medium, chopped
  Sliced fresh mushrooms 1 Cup (16 tbs)
  Garlic 2 Clove (10 gm), minced
  Dried thyme leaves 1⁄2 Teaspoon
  Dried basil leaves 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Ground black pepper 1⁄4 Teaspoon
  Cooked brown rice 3 Cup (48 tbs)
  Chopped pecans 1⁄2 Cup (8 tbs), toasted
  Shredded parmesan cheese 1⁄2 Cup (8 tbs)
Directions

Heat oil in large skillet over medium-high heat until hot. Add broccoli, carrots and onion. Cook and stir 5 to 7 minutes or until broccoli and carrots are tender and onion begins to brown. Add mushrooms, garlic, thyme, basil, salt and pepper. Cook and stir 2 to 3 minutes or until mushrooms are tender. Add rice and pecans; cook 1 to 2 minutes, stirring, until well blended and thoroughly heated. Sprinkle with cheese, if desired.
