Bulgur Pilaf With Apricots And Raisins
|Onion||1 , chopped|
|Bulgur/Cracked wheat||1 Cup (16 tbs)|
|Raisins||1⁄4 Cup (4 tbs)|
|Diced dried apricots||1⁄4 Cup (4 tbs)|
|Boiling chicken stock||2 Cup (32 tbs)|
|Chopped fresh parsley||1⁄4 Cup (4 tbs)|
In nonstick skillet, melt margarine over medium heat; cook onion, stirring, until softened.
Stir in bulgur and cook, stirring, for 1 minute.
Stir in raisins, apricot and stock; cover and simmer over low heat for 15 minutes or until liquid is absorbed.
Stir in parsley (if using); season with salt and pepper to taste.
