Basmati Rice Pilaf

Ingredients
  Vegetable cooking spray 1
  Reduced calorie margarine 1 Teaspoon
  Minced walnuts 1 Tablespoon
  Minced onion 2 Tablespoon
  Garlic 1 Clove (5 gm), minced
  Canned low sodium chicken broth 2 Cup (32 tbs)
  Basmati rice 1 Cup (16 tbs), uncooked
  Raisins 1⁄4 Cup (4 tbs)
Directions

Coat a large saucepan with cooking spray; add margarine.
Place over medium-high heat until hot.
Add walnuts, and cook, stirring constantly, until walnuts are toasted.
Remove from saucepan, and set aside.
Add onion and garlic to saucepan; saute until tender.
Add chicken broth.
Bring to a boil; stir in rice and raisins.
Cover, reduce heat, and simmer 15 minutes.
Remove from heat, and let stand 10 minutes.
Add toasted walnuts; toss gently with a fork.
