Triticale Berry Rice Pilaf
|Water||1 1⁄2 Cup (24 tbs)|
|Condensed chicken broth||10 3⁄4 Ounce (1 Can)|
|Triticale berries||1⁄2 Cup (8 tbs)|
|Brown rice||1⁄2 Cup (8 tbs) (Regular)|
|Minced dried onion||2 Tablespoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Thinly sliced mushrooms||1 Cup (16 tbs) (Fresh)|
In a 2-quart saucepan bring water and chicken broth to boiling; stir in triticale berries and salt.
Reduce heat; cover and simmer 1 hour.
Add rice, minced onion, and nutmeg.
Return to boiling; reduce heat.
Cook, covered, for 40 minutes.
Add sliced mushrooms; cover and cook 5tol0 minutes more or till tender.
Drain off excess liquid, if necessary.
Press mixture into a buttered 3-cup ring mold; unmold onto platter.
Garnish with parsley, if desired.
