Pigs In Potatoes

Ingredients
  Sausage links 6 Small
  Water 1⁄4 Cup (4 tbs)
  Mashed potatoes 2 Cup (32 tbs), mashed
  Egg yolk 1
  Finely chopped onion 1 Tablespoon, finely chopped
  Finely chopped parsley 1 Teaspoon, finely chopped
  Fine dry bread crumbs 1⁄4 Cup (4 tbs)
  Egg 1 , diluted with 1 tablespoon water or milk
  Water/Milk 1 Tablespoon (To Dilute Egg)
  Fat 2 Tablespoon, heated
Directions

Place sausages in heavy skillet, add water, cover and steam 5 minutes.
Drain off water, and continue cooking 20 minutes.
Beat together potatoes, egg yolk, onion and parsley; then coat each cooked sausage with this mixture, roll in bread crumbs, then in diluted egg, then again in bread crumbs.
Fry sausages in very hot fat until golden brown.
