Pigs In Potatoes

|Water||1⁄4 Cup (4 tbs)|
|Mashed potatoes||2 Cup (32 tbs), mashed|
|Finely chopped onion||1 Tablespoon, finely chopped|
|Finely chopped parsley||1 Teaspoon, finely chopped|
|Fine dry bread crumbs||1⁄4 Cup (4 tbs)|
|Egg||1 , diluted with 1 tablespoon water or milk|
|Water/Milk||1 Tablespoon (To Dilute Egg)|
|Fat||2 Tablespoon, heated|
Place sausages in heavy skillet, add water, cover and steam 5 minutes.
Drain off water, and continue cooking 20 minutes.
Beat together potatoes, egg yolk, onion and parsley; then coat each cooked sausage with this mixture, roll in bread crumbs, then in diluted egg, then again in bread crumbs.
Fry sausages in very hot fat until golden brown.
