Breaded Pigs Knuckles

Ingredients
  Pigs knuckles 6
  Boiling water 3 Cup (48 tbs)
  Onion 1 Medium, stuck with 3 cloves
  Cloves 3 (Stuck With Onion)
  Salt 2 Teaspoon
  Egg 1 , beaten
  Fine dry bread crumbs 1 Cup (16 tbs)
  Shortening 1⁄2 Cup (8 tbs)
Directions

Put pigs' knuckles in kettle with boiling water to cover.
Cook for 15 minutes.
Remove from boiling water with slotted spoon; reserve liquid.
Plunge knuckles into cold water.
Pull off skins.
Return knuckles to liquid.
Add onion and salt.
Cook, covered, until meat falls off bones, about 2 hours.
Drain.
Pick meat off bones and cut into bite-size pieces.
Dip first into egg, then into crumbs.
Saute on all sides in hot shortening until brown.
