Pig Trotters

  Onions 2
  Ground mace 1 Pinch
  Lemon peel strips 1 Tablespoon
  Chicken stock cube 1
  Salt To Taste
  Pepper To Taste
  Flour 1⁄2 Ounce
  Parsley 1 Tablespoon

Ask the butcher to split the trotters in half lengthwise.
Wash them and put into a pan with the sliced onions, mace, lemon peel, stock cube, 1 pint (2 cups) water, and a little salt and pepper.
Bring to boiling point, stirring occasionally, cover and simmer for about 2 hours.
Remove the trotters and thicken the liquid with the flour blended smoothly with a little cold water.
Boil 2 to 3 minutes.
Pour over the trotters and serve hot sprinkled with chopped parsley.
