Boiled Pig's Head

Ingredients
  Pig's head 1
  Salt To Taste
Directions

Clean the head thoroughly.
Remove the hair, eyes, snout and brains if this has not been done by the butcher.
Soak well in salt water for 2 hr., changing the water 5 or 4 times.
Drain the head well, place in a large saucepan and just cover with cold water.
Simmer for 3-3 1/2 hr or until tender.
