Ricotta Pie

Ricotta Pie is an extremely fabulous variety of sweet or savory pie, often served as a dessert, and loved for its creamy rich ricotta cheese filling. Often served for breakfast in special mornings like Easter, ricotta pie is usually made rich, dense and velvety that seamlessly holds its shape when cut through the filling and then the crust. Mostly with just a bottom crust, the delicious ricotta pie filling uses not much ingredients, which apart from drained ricotta cheese takes in heavy cream, cornstarch, sugar, vanilla extract, eggs, citron, ground cinnamon etc. Certain varieties seem to use canned pineapple, crushed, instead of citron, which normally doesn’t badly affect the taste of ricotta pie yet leaves a very compatible flavor.
