Chiffon Pie

Chiffon pie refers to a pie having ginger crust, and is prepared with egg and gelatin as the main ingredients. This dish is very light in weight as chiffon. The pie is at times covered with whipped cream layer to define its light weight. Several variations of the chiffon pie exist, with lemon chiffon pie being the most popular. However, a chiffon pie can be made with mango, pumpkin, strawberry, coffee and other kinds of flavors too.

In the beginning of 20th century, chiffon pie was very famous as Sissy Pie. It was also known by various other names like fluff, soufflé pie, and fairy tart. Sissy pie or chiffon pie recipe consisted of mixing together egg whites and pudding, and baking the dish in oven. However, in the recent time period, the preparation method has been modified, where gelatin is popularly used for setting the filling. These days, chiffon pie refers to an airy and light cake which is prepared with beaten egg white and oil.

Lemon chiffon pie

 

The crust is prepared by combining together sugar, ginger, gingersnap cookie-crumbs, and melted butter. The mixture is transferred to glass pie container and placed in the oven until the crust gets darker in color and is firm. Filling is prepared by whisking together sugar, egg yolks, shredded lemon peel, lemon juice, and salt. The mixture is put on stove and gelatin is added while stirring the mix properly. The pan is placed in a bowl with ice cold water and the mix is stirred continuous until it gets cool, and is transferred to a large bowl after that. Whipped cream is added to the mix, blended properly, the mixture is transferred on the cool crust, and the prepared chiffon pie dish is refrigerated before serving.

 

Banana Chiffon Pie

 

The banana chiffon pie recipe involves softening gelatin for around five minutes in water, and combining and cooking together lemon juice, lemon peel, orange peel, banana, sugar, salt, beaten egg yolks. Thereafter, gelatin is added and the mixture is stirred well and cooked until thick. Egg whites and sugar are beaten together, folded into the banana mix, poured into the pie shell, and chilled until firm. The flavor and appeal of the prepared banana chiffon pie can be enhanced by pouring some whipped cream over the banana pie.
