Berry Pie Filling

Berry pie filling is made from fresh berries and the pie is the most prominent dessert for year round occasions. The berries are mashed either in a blender or a potato masher and mixed with granulated sugar. Incase the fruits are frozen; they are thawed properly before the mashing process. A hint of either lemon or orange juice is mixed with the berries. The berry pie filling is placed inside the pastry shell or pie crust. The pie crust should be firm enough to hold the filling in the middle while baking. Berry pie can be either open faced with a dollop of whipped cream, or can have floured strips covering the pie filling.
