Light and Fruity Pie
|Jello gelatin||4 Ounce (One 4 Serving Size, Jell-O Package, Any Flavor)|
|Boiling water||2⁄3 Cup (10.67 tbs)|
|Cold water||1⁄2 Cup (8 tbs)|
|Ice cubes||1 Cup (16 tbs)|
|Cool whip whipped topping||8 Ounce, thawed (3 1/2 Cups, Non Dairy)|
|Diced peeled fresh peaches/Apricots / pears||1 Cup (16 tbs)|
|Prepared 9 inch graham cracker crumb crust||1 , cooled|
Completely dissolve gelatin in boiling water.
Combine cold water and ice cubes to make 1 1/4 cups.
Add to gelatin, stirring until slightly thickened.
Remove any unmelted ice.
Using wire whisk, blend in whipped topping.
Fold in fruit.
Chill until mixture mounds.
Spoon into pie crust.
Chill about 2 hours.
Garnish with additional fruit, if desired.
