Raisin Pie

The raisin pie is a fruity and lemony dessert pie made with fresh raisins and orange and lemon flavors to it. baked in a hot water pastry shell, this raisin pie is made with added orange and lemon juice and can be served with a fruit sauce.
  Lemon juice 1⁄3 Cup (5.33 tbs)
  Grated lemon rind 1 Teaspoon
  Orange juice 1⁄2 Cup (8 tbs)
  Grated orange rind 2 Teaspoon
  Brown sugar 1 Cup (16 tbs)
  Seeded raisins 2 Cup (32 tbs)
  Water 1 3⁄4 Cup (28 tbs)
  Flour 6 Tablespoon
  Hot water 1 Cup (16 tbs)
  Pastry 1 Cup (16 tbs)

Combine lemon juice and rind, orange juice and rind, sugar, raisins and 1 1/4 cups water and heat to boiling.
Mix flour and remaining 1/2 cup water to a smooth paste and add to mixture gradually, stirring constantly.
Cook 5 minutes.
Line piepan with pastry, pour in filling and cover with top crust.
Bake in hot oven (400° F.) 40 minutes
