Lime Chiffon Pie

Ingredients
  Unflavored gelatin 1 Tablespoon (1 Envelope)
  Cold water 1⁄4 Cup (4 tbs)
  Egg yolks 4 , slightly beaten
  Sugar 2⁄3 Cup (10.67 tbs)
  Grated lime 2 Teaspoon
  Lime juice 1⁄2 Cup (8 tbs)
  Salt 1⁄4 Teaspoon
  Green food coloring 3 Drop (Adjust Quantity As Needed)
  Egg whites 4
  Sugar 1⁄2 Cup (8 tbs)
  Baked 9 inch pie shell 1
Directions

Soften gelatin in cold water; set aside.
Mix the egg yolks, sugar, lime peel and juice, and salt together in top of a double boiler.
Cook over simmering water, stirring constantly, until mixture is slightly thickened.
Remove from water and blend in gelatin, stirring until gelatin is dissolved.
Mix in the food coloring.
Cool.
Chill until mixture is partially set.
Beat egg whites until frothy; gradually add 1/2 cup sugar, beating constantly until stiff peaks are formed.
Spread over gelatin mixture and fold together.
Turn into pie shell.
Chill until firm.
