Strawberry Ice Cream Pie
|Crushed strawberries||2 Tablespoon|
|Red food coloring||2 Drop|
|Sugar||1⁄4 Cup (4 tbs)|
|Vanilla ice cream||2⁄3 Quart|
|Cereal flake pie shell||1|
|Strawberries||1 Cup (16 tbs), sliced|
Heat marshmallows with crushed strawberries slowly, folding over and over until marshmallows are half melted.
Remove from heat and continue folding until mixture is smooth and fluffy.
Add coloring and cool.
Beat egg whites until they hold a peak; add sugar slowly, beating constantly.
Blend lightly with marshmallow mixture.
Place ice cream in crumb shell, cover with sliced strawberries and top with marshmallow meringue, swirled attractively.
Brown quickly in broiler or very hot oven (450Â° F.) 1/2 minute or until tips of the meringue swirls are browned.
Remove pie from oven, tuck unstemmed strawberries into the swirls and serve immediately.
