Ginger Cheese Pie

Ingredients
  Graham cracker crumbs 1 1⁄2 Cup (24 tbs)
  Butter 1⁄4 Cup (4 tbs), melted (1/2 stick)
  Cream cheese 11 Ounce
  Sugar 3⁄4 Cup (12 tbs)
  Eggs 2 , well beaten
  Freshly grated ginger 1 Tablespoon
  Sour cream 1 Pint
  Preserved ginger 2 Tablespoon, chopped
Directions

Preheat the oven to 350 degrees.
Mix the crumbs with the melted butter and press into a nine inch pie pan.
Blend the cream cheese with one half cup of the sugar and the eggs.
Beat until smooth.
Add the grated ginger and pour the mixture into the prepared crust.
Bake twenty minutes.
Mix the sour cream with the remaining sugar and spread over the surface of the pie.
Sprinkle with the preserved ginger.
Return the pie to the oven with the heat turned off for three or four minutes.
Cool and chill until set.
