Best Strawberry Pie Filling
|Strawberries||30 Ounce (3 Baskets)|
|Sugar||1 Cup (16 tbs)|
|Butter/Margarine||1 Tablespoon, cut into pieces|
|9 inch pastry shell||1 , baked (1 1/2 Inches Deep, In A Glass, Ceramic, Or Plastic Dish)|
|Whipped cream||3 Tablespoon|
Wash and hull berries; cut enough berries in half to make 4 cups total.
Set remaining whole berries aside.
In a 2 quart batter bowl or casserole, stir together the 4 cups cut strawberries, sugar, cornstarch, and butter.
Cover with wax paper.
Microwave on HIGH (100%) for 6 to 7 minutes (stirring every 3 minutes) or until mixture boils and thickens.
Pour into baked pastry shell; let cool completely.
Top with whole strawberries and refrigerate.
Before serving, top with whipped cream, if desired.
