Great Grandma's Pork Pie

Ingredients
  Ground lean pork 5 Pound
  Salt 2 Teaspoon
  Pepper 1 Teaspoon
  Sage 1 Teaspoon
  Onion 1 Large, finely chopped
  Salted soda biscuit 20 , crushed
  Double crust pastry 8 Small
Directions

Place the pork in a large heavy kettle with enough water to cover and separate meat with a fork.
Add onion and cook slowly for at least one hour.
Add salt, pepper and sage, then stir in enough crushed crackers to thicken the mixture.
Taste and add more seasoning and herbs if you like.
Line pie plates with pastry.
Fill even with meat, then cover with top pastry.
Brush with beaten whole egg and prick tops.
Bake at 350 to 375F until brown.
