Crispy Cheese Pies

  Flour 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Freshly ground pepper To Taste
  Butter/Margarine 90 Gram
  Crushed cornflakes 2 Tablespoon
  Eggyolk 1
  Water 1⁄2 Cup (8 tbs) (If Needed)
For filling
  Hard-boiled eggs 3 , hardboiled
  Grated hard cheese 1⁄2 Cup (8 tbs)
  Gherkins 2 , chopped
  Capers 1 Teaspoon, chopped
  Bacon rashers 3 , cooked and crumbled
  Milk 2 Tablespoon (For Finishing)
  Grated cheese 2 Tablespoon (For Finishing)

Sift flour, salt and pepper together and rub in butter. Mix in cornflakes, then stir in egg yolk and a little water, if necessary, to make a firm dough. Roll out on a floured surface and cut with a 6cm biscuit cutter. Spoon filling on to the centres of half the rounds, brush edges with a little milk and top with remaining rounds, pressing edges well together. Brush tops with milk and sprinkle with a little extra grated cheese. Bake in a hot oven 200C (400F) 18-20 minutes. Makes about 12.
FILLING: Combine all ingredients and mix well.
