Crispy Cheese Pies
|Flour||1 Cup (16 tbs)|
|Freshly ground pepper||To Taste|
|Crushed cornflakes||2 Tablespoon|
|Water||1⁄2 Cup (8 tbs) (If Needed)|
|Hard-boiled eggs||3 , hardboiled|
|Grated hard cheese||1⁄2 Cup (8 tbs)|
|Gherkins||2 , chopped|
|Capers||1 Teaspoon, chopped|
|Bacon rashers||3 , cooked and crumbled|
|Milk||2 Tablespoon (For Finishing)|
|Grated cheese||2 Tablespoon (For Finishing)|
Sift flour, salt and pepper together and rub in butter. Mix in cornflakes, then stir in egg yolk and a little water, if necessary, to make a firm dough. Roll out on a floured surface and cut with a 6cm biscuit cutter. Spoon filling on to the centres of half the rounds, brush edges with a little milk and top with remaining rounds, pressing edges well together. Brush tops with milk and sprinkle with a little extra grated cheese. Bake in a hot oven 200C (400F) 18-20 minutes. Makes about 12.
FILLING: Combine all ingredients and mix well.
