Breakfast Bacon Pie
|Frozen hash brown potatoes||3 Cup (48 tbs), thawed|
|Monterey jack cheese||4 Ounce, shredded (About 1 Cup)|
|Sharp cheddar cheese||3 Ounce, shredded (About 0.75 Cup)|
|Picante sauce||1 Cup (16 tbs)|
|Thick bacon slices||6 , crisp cooked and crumbled|
Place the eggs in a large mixing bowl and beat until smooth.
Stir in the potatoes, cheeses, picante sauce and half the bacon.
Spoon the potato mixture into a greased deep-dish pie pan.
Chill, covered, for 8 to 10 hours.
Remove from the refrigerator 30 minutes before baking.
Bake, uncovered, at 350 degrees for 25 to 30 minutes.
Sprinkle with the remaining bacon.
Bake for 5 to 10 minutes longer or until a knife inserted in the center comes out clean.
Serve with a dollop of sour cream and additional picante sauce if desired.
