Cottage Cheese Pie

Ingredients
  Milk 2⁄3 Cup (10.67 tbs)
  Flour 2 Tablespoon
  Sugar 1⁄2 Cup (8 tbs)
  Egg yolk 1 , beaten
  Butter 2 Tablespoon, softened
  Cottage cheese 1 Cup (16 tbs)
  Lemon 1 , juiced and grated
  9 inch baked pie shell 1
  Meringue 1 Cup (16 tbs)
Directions

Scald the milk; do not boil.
Combine the flour and sugar in the top of a double boiler over boiling water.
Add the milk gradually, stirring constantly.
Cook until thickened, stirring constantly.
Stir in the egg yolk and cook until thick and smooth, stirring constantly.
Stir in the butter, cottage cheese and lemon juice and zest.
Pour into the pie shell.
Cover with meringue, sealing to the edge.
Bake for a few minutes or until browned.
