Carrot Pie

Ingredients
  Carrots 4 Large
  Butter 1⁄4 Cup (4 tbs)
  Milk 1⁄2 Cup (8 tbs)
  Vanilla 1 1⁄2 Teaspoon
  Eggs 2
  Sugar 1⁄4 Cup (4 tbs)
  Flour/Cornstarch 1⁄2 Cup (8 tbs)
  Nutmeg 1 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Baking powder 1⁄4 Teaspoon
Directions

Heat oven to 375 degrees.
Cook carrots in boiling water until well done.
Skin carrots and mash, add melted butter, milk, egg and vanilla.
Sift flour, sugar, nutmeg, salt and baking powder.
Beat all ingredients together with a rotary beater.
Pour into pastry-lined pie pan and bake 50 to 60 minutes.
