Old-fashioned Cherry Pie
|Sugar||1 Cup (16 tbs)|
|Sifted enriched flour||1⁄4 Cup (4 tbs)|
|Cherry juice||1⁄2 Cup (8 tbs)|
|Drained, canned, pitted tart red cherries||3 Cup (48 tbs)|
|Soft butter||1 Tablespoon|
|Almond extract||4 Drop|
|Pastry||9 Inch (For 9-Inch Lattice-Top Pie)|
Combine sugar, flour, and salt; stir in juice.
Cook and stir over medium heat till thick; cook 1 minute longer.
Add cherries, butter, extract, and 10 drops red food coloring.
Let stand; make pastry.
Line 9 inch pie plate with pastry; fill.
Top with lattice crust.
Bake in very hot oven (450Â°) 10 minutes.
Reduce heat to 350Â° and bake about 45 minutes more.
