Old-fashioned Cherry Pie

The old fashioned cherry pie is a luscious and fruity cherry pie baked with cherry juice and red tart cherries. Baked simply with sugar, flour and butter, the cherry pie is naturally flavored with the cherry juice and cherries. Th eold fashioned cherry pie can be baked with a decorated lattice top.
  Sugar 1 Cup (16 tbs)
  Sifted enriched flour 1⁄4 Cup (4 tbs)
  Salt 1⁄4 Teaspoon
  Cherry juice 1⁄2 Cup (8 tbs)
  Drained, canned, pitted tart red cherries 3 Cup (48 tbs)
  Soft butter 1 Tablespoon
  Almond extract 4 Drop
  Pastry 9 Inch (For 9-Inch Lattice-Top Pie)

Combine sugar, flour, and salt; stir in juice.
Cook and stir over medium heat till thick; cook 1 minute longer.
Add cherries, butter, extract, and 10 drops red food coloring.
Let stand; make pastry.
Line 9 inch pie plate with pastry; fill.
Top with lattice crust.
Flute edges.
Bake in very hot oven (450°) 10 minutes.
Reduce heat to 350° and bake about 45 minutes more.
