|Sugar||1⁄4 Cup (4 tbs)|
|Orange juice||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Papaya||1 Large, peeled, sliced|
|Baked 9 inch pastry shell||1|
|Whipping cream||3⁄4 Cup (12 tbs), whipped|
|Macadamia nuts||1⁄2 Cup (8 tbs), chopped|
Combine sugar and cornstarch in a heavy saucepan, stir well to remove lumps.
Gradually add orange juice and lemon juice, stirring until blended.
Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
Cook 1 minute, stirring constantly.
Remove mixture from heat.
Place papaya slices in pastry shell, pour orange juice mixture over papaya.
Cover and refrigerate several hours.
Spread entire surface of pie with whipped cream, and sprinkle with nuts.
