Strawberry Rhubarb Pie
|Sugar||1⁄2 Cup (8 tbs)|
|Water||1 Cup (16 tbs)|
|Rhubarb||1 Pound, cut into 0.5 inch pieces|
|Strawberries||1 Pint, hulled|
|Prebaked homemade pie shell||1|
Combine sugar, cornstarch, and water in large micro proof bowl.
Stir until cornstarch is dissolved.
Cook on HI, 2 1/2 to 3 minutes, or until mixture is clear, stirring once during cooking time.
Add rhubarb and strawberries.
Cook on HI, 2 to 3 minutes, or until sauce begins to thicken.
Continue to cook on HI, 1 minute, or just until sauce is thickened.
Let stand 5 minutes.
Pour into pie shell and cool to room temperature before serving.
