Mincemeat Pie

Ingredients
  Finely chopped lean beef 2 Cup (32 tbs)
  Suet/Other fat 1 Cup (16 tbs)
  Sugar 2 Cup (32 tbs)
  Finely chopped tart apples 4 Cup (64 tbs)
  Strong coffee 1 Cup (16 tbs)
  Ground cloves 1 Tablespoon
  Raisins 2 Cup (32 tbs)
  Cinnamon 1 Tablespoon
  Nutmeg 1 Tablespoon
  Currants 2 Cup (32 tbs)
  Stock 1 Cup (16 tbs)
  Finely chopped citron 1 Cup (16 tbs)
  Salt 2 Teaspoon
Directions

Purchase lean meat and boil until tender, cool in the liquor, then put through chopper.
Mix materials together in order named.
Simmer slowly for about 1 hr., bottle hot, and seal.
This makes about 5 pts.
When making pie, line a deep plate with crust, fill with mince meat, using 1 qt. and then put over top 1 tbsp. cream, 1 tbsp. sugar, a few whole seeded raisins, and 2 tsp. butter in bits.
Put on top crust and bake.
