Lemon Pie

Ingredients
  Sugar 1 1⁄2 Cup (24 tbs)
  Boiling water 2 1⁄4 Cup (36 tbs)
  Flour 4 Tablespoon
  Eggs 3
  Cornstarch 5 Tablespoon
  Lemon 1
  Salt 1⁄2 Teaspoon
  Lemon juice 1⁄2 Cup (8 tbs)
  Pastry 1
Directions

Mix sugar, flour, cornstarch, and salt.
Add boiling water, stirring constantly.
Cook for 15 min. in double-boiler, stirring as it thickens.
Beat egg-yolks and pour cornstarch mixture into eggs slowly, stirring constantly.
Return filling to double-boiler, cook 2 min. longer.Remove from fire, add lemon juice and rind.
When cold pour into baked pastry shell using 2 egg white
