Nectarine Cream Pie
|Sugar||1⁄4 Cup (4 tbs)|
|Skim milk||1 1⁄2 Cup (24 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Almond extract||1⁄4 Teaspoon|
|Peach low fat yogurt||1⁄2 Cup (8 tbs)|
|Spiced crumb crust||1 Cup (16 tbs)|
|Flaked coconut||2 Tablespoon|
Combine sugar and cornstarch in a medium saucepan, stir well.
Gradually add milk, stirring until smooth.
Cook over medium heat, stirring constontly, until thickened.
Gradually stir one-fourth of hot mixture into egg yolks; add to remaining hot mixture, stirring constantly.
Cook, stirring constantly, 1 minute or until mixture thickens.
Remove from heat, and stir in flavorings.
Cool 15 minutes.
Stir in yogurt.
Arrange nectarine slices in Spiced Crumb Crust; pour filling over fruit.
Sprinkle with coconut.
