Roll out the pastry and use to line an 8-inch quiche pan.
Slice the carrots and beans .
Chop the onion, pepper and bacon finely .
Skin the tomato and remove the seeds.
Chop the flesh coarsely .
Melt the butter in a pan and cook the bacon and vegetables for 10 minutes over low heat, stirring well.
Season with salt and pepper and leave until cool.
Put into the quiche shell and cover the vegetables with a piece of foil.
Bake at 400Â°F for 45 minutes.
Grate the cheese .
Remove the foil and sprinkle the cheese all over the vegetables.
Continue baking for 15 minutes until the cheese has melted.
Serve at once.
