Basic Fresh Fruit Pie

  Fruit 1 Quart
  Lemon juice 3 Tablespoon
  Sugar 1 Cup (16 tbs)
  Tapioca 2 Tablespoon
  Butter 2 Tablespoon
  Pastry dough 300 Gram

Prepare fruit. Add lemon juice, the larger quantity for fruits that are blander. Combine sugar and tapioca, the larger quantity depending on juiciness and tartness of fruit. Add sugar-tapioca mixture and lemon juice to fruit in large bowl; mix gently. Immediately fill unbaked pie shell, letting fruit hump a little in center. Dot with butter. Place top crust over filling, sealing edges well. Bake 40 to 60 minutes or until done.
