Puff Pie Shell
|Butter||1⁄4 Cup (4 tbs)|
|Boiling water||1⁄2 Cup (8 tbs)|
|Flour||1⁄2 Cup (8 tbs)|
Combine butter and boiling water in saucepan. Bring to a boil. Reduce heat and add flour all at once, stirring rapidly. Cook and stir until mixture pulls away from sides of pan in smooth, compact mass, about 2 minutes. Remove from heat. Add eggs, one at a time, beating thoroughly after each. Then beat steadily until mixture is satiny and breaks off when spoon is raised. Spread most of dough evenly over bottom and sides of pie pan and drop remaining dough by spoonfuls around rim. Bake 35 minutes. Remove from oven, and prick bottom and sides with a fork. Bake another 5 minutes, or until dry and crisp. Cool before filling.
