Quick Cookie Apple Pie
|Apples||6 , peeled, cored, and sliced (tart, juicy)|
|Butter||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Flour||1 Cup (16 tbs)|
Layer apples in buttered pie pan. Sprinkle with sugar and nutmeg; dot with butter. Repeat layers. Cream 1/2 cup butter with brown sugar until well blended and fluffy. Add flour; mix well. Take a small amount of the mixture in your hands and lightly pat into a thin circle, about 3 inches in diameter. Lay on top of apples. Repeat making circles, and lay them on apples with edges overlapping. Cover top of pie this way. Bake 35 to 60 minutes, or until apples are soft and cookies on top are crisp and lightly brown. Pie is best served warm. If made ahead, reheat. Pie freezes well.
