Chicken Pot Pie On The Grill

MAKING
1) Over the hot grill, sear the chicken on each side
2) Once they are seared, close the grill with the lid and allow the chicken to cook for about 45 minutes
3) Once cooked, they take off and keep aside
4) In a cast iron pan, melt some butter and to it add the flour
5) Once the flour is cooked through, add the heavy cream and chicken stock
6) To it add the diced celery and season the roux with salt, pepper and garlic powder to taste
7) Then add the cooked potatoes, cooked corn, peas and carrots
8) Once the grilled chicken is nice and cool
9) Take the meat off the bone, shred them
10) Add the pieces of chicken to the roux
11) Allow the roux to simmer till lightly thickened
12) Roll out the dough and place onto the base of a 10inch pyrex pie dish
13) Fill with the chicken roux
14) Roll out the other half and cover the top of the pie dish
15) Flute the edges , make a slit on the top
16) Grill the pie on indirect heat over the grill for about 40 minutes
17) Rub the top of the pie with some butter to help brown up

SERVING
18) Serve the pie warm
