Rhubarb Pie

Ingredients
  Pie crust dough 1
  Flour 1⁄3 Cup (5.33 tbs)
  Sugar 1 1⁄2 Cup (24 tbs)
  Ground cinnamon 1⁄4 Teaspoon
  Rhubarb stalks 6 , trimmed and cut into 1/2 inch slices (long)
  Finely grated lemon peel 1 Tablespoon
  Lemon juice 2 Tablespoon
For glaze
  Egg 1 , beaten with water
Directions

GETTING READY
1) Preheat the oven to 425 F

MAKING
2) Roll out the dough, and place into a 9 inch pie dish
3) Trim the excess and place in the refrigerator to chill
4) Make the filling by mixing together the flour, sugar, cinnamon in a large bowl
5) Add the pieces of rhubarb, lemon peel and the lemon juice
6) Toss the mixture using the hands till the rhubarb is well coated
7) Roll out the remaining dough for the top crust
8) Spread the rhubarb mixture evenly onto the pie crust
9) Brush the bottom crust with water
10) Place the top crust and press together
11) Using as knife, trim off the excess
12) Decorate the edges and the top of the crust
13) Glaze the top crust with the egg
14) Cut a vent using a sharp knife
15) Bake in the oven for 15 minutes 16) Reduce the temperature to 350 F and bake for another 40 minutes till the top is golden
17) Place on the wire rack to cool

SERVING
18) Serve warm or at room temperature
