Coconut Pineapple Pie
|Butter/Margarine||6 Tablespoon (1/4 Cup & 2 Tablespoons)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|All-purpose flour||3 Tablespoon|
|Pineapple||1 Cup (16 tbs), crushed & drained|
|Flaked coconut||1 Cup (16 tbs)|
|Unbaked 9 inch pastry shell||1|
1) Preheat oven to 350° F.
2) Take a small bowl and beat eggs in it until thick and lemon colored.
3) Add all butter, sugar, flour, pineapple and flaked coconut. Mix nicely.
4) Pour the mixture into pastry shell and bake for about 50 minutes or until filling is nicely set.
5) Slice and serve immediately.
