Tripe and Tomato Pie
|Plain flour||3 Tablespoon (Leveled)|
|Milk||2 Cup (32 tbs)|
|Bacon||4 Ounce (125 Grams)|
|Tomatoes||3 , thinly sliced|
|Tripe||2 Pound, cooked cut into 1 inch squares (1 Kilograms)|
|Mashed potato||2 Cup (32 tbs)|
|Cheese||2 Tablespoon, grated (For Topping)|
1)Preheat oven to 2200 C (4250 F)
2)In melted butter add the flour, salt and pepper, and stir until smooth.
3)Let it not brown and cook for another minute adding milk stir and cook until the sauce boils and thickens.
4)Lightly fry or grill the bacon, then cut it into small pieces.
5)Thinly slice the tomatoes.
6)Stir the cooked tripe squares into the sauce and pour half into a lightly greased casserole.
7)Add half bacon and tomatoes, then the remainder of the tripe, sauce, bacon and tomatoes.
8)Add beaten egg to the mashed potato and spread over the top of the mixture in the casserole.
9)Score the surface with a fork and sprinkle with grated cheese.
10)Bake in a hot oven for about 15 minutes.
11)Serve it hot.
