Sweet Red Cherry Pie
|Sweet cherries||1 1⁄2 Pound|
|Sugar||2⁄3 Cup (10.67 tbs)|
|Lemon juice||1 Tablespoon|
|Grated lemon rind||1 Teaspoon|
|Flour/21/2 tablespoons quick-cooking tapioca||3 Tablespoon|
Line a 9-inch pie plate with half the pastry.
Remove stones from cherries with a sharp knife.
Toss cherries with remaining ingredients.
Pour into pie plate.
Cover with lattice top.
Bake in a hot oven (425° F) 30 minutes; reduce temperature to moderate 350° F and continue baking until fruit is tender, about 15 min- utes.
Makes one 9-inch pie.
