Apricot Whip Pie
|Pureed cooked dried apricots||1 Cup (16 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Almond extract||1⁄4 Teaspoon|
|Lemon juice||1 Tablespoon|
|Oatmeal pie crust||8 Inch|
|Apricot halves||1 Cup (16 tbs) (Cooked)|
Place apricots, salt, sugar, unbeaten egg whites, extract and lemon juice in a large bowl.
Beat with rotary beater until light and fluffy and stiff enough to stand in peaks.
Heap into oatmeal pie crust.
Garnish with apricot halves.
Makes one 8-inch pie.
