This Apricot Whip Pie is a wonderful dessert treat which has been a favorite for generations! Here's a simple and quick recipe for you to follow to make your own homamade Apricot Whip Pie without any flaw!
Ingredients
  Pureed cooked dried apricots 1 Cup (16 tbs)
  Salt 1⁄4 Teaspoon
  Sugar 3⁄4 Cup (12 tbs)
  Egg whites 2
  Almond extract 1⁄4 Teaspoon
  Lemon juice 1 Tablespoon
  Oatmeal pie crust 8 Inch
  Apricot halves 1 Cup (16 tbs) (Cooked)
Directions

Place apricots, salt, sugar, unbeaten egg whites, extract and lemon juice in a large bowl.
Beat with rotary beater until light and fluffy and stiff enough to stand in peaks.
Heap into oatmeal pie crust.
Chill.
Garnish with apricot halves.
Makes one 8-inch pie.
