Golden Nugget Orange Pie
|Eggs||3 , separated|
|Pineapple||1 1⁄2 Cup (24 tbs) (Drained)|
|Baked pie shell||9 Inch|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Orange juice||1 1⁄4 Cup (20 tbs)|
|Pineapple juice||1 Cup (16 tbs)|
Combine sugar, cornstarch, orange juice, and pineapple juice in a saucepan.
Mix until smooth.
Cook over medium heat, stir- ring constantly, until thick and clear.
Stir a little of the hot mixture into the beaten egg yolks and return to saucepan.
Cook over very low heat, and cook about 2 minutes, stirring con- stantly.
Remove from heat.
Stir in pineapple pieces and butter.
Cover and cool.
Pour into baked shell.
Beat egg whites until foamy.
Gradually beat in sugar until stiff.
Spread meringue over filling.
Bake in a hot oven (425° F) 5 to 10 minutes.
Makes one 9-inch pie.
