Strawberry Gelatin Pie
|Strawberries||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Strawberry flavored gelatin||3 Ounce|
|Hot water||1 Cup (16 tbs)|
|Baked crumb pie shell||1|
|Heavy cream||1⁄2 Cup (8 tbs)|
Wash and hull berries.
Place in a bowl and cut through with a knife several times.
Sprinkle 1/4 cup of the sugar over berries and let stand 30 minutes.
Dissolve gelatin in hot water.
Beat egg yolks slightly in top of a double boiler.
Drain 1/4 cup juice from strawberries and combine with egg yolks.
Cook over hot water, stirring constantly, until thickened.
Remove from heat and stir in gelatin.
Chill until slightly thickened.
Fold in strawberries.
Beat egg whites until stiff.
Gradually beat in salt and 1/4 cup of sugar.
Fold into gelatin mixture.
Pour into graham cracker pie shell.
Chill until firm.
Garnish with whipped cream before serv- ing.
Makes one 9-inch pie.
