Spicy Custard Pie
|Unbaked 9 inch pie shell||1 (Pastry)|
|Pure vanilla extract||1 Teaspoon|
|Milk||2 3⁄4 Cup (44 tbs)|
1 Line a 9-inch pie plate with pastry.
2 Preheat the oven to 450°Fahrenheit.
3 In a bowl, break eggs; remove enough of one egg white to lightly brush the bottom of the pastry shell.
4 Lightly beat the eggs.
5 Blend in sugar, salt, mace, vanilla and milk, mixing well.
6 Into the pie shell, pour the custard; sprinkle top with nutmeg.
7 Bake in oven for 10 minutes.
8 Lower the heat to 300°Fahrenheit and bake for another 45 minutes or just until silver knife inserted in center of pie comes out clean.
9 Serve warm.
Do not overbake as it makes custard watery.
