Kiwi Lime Pie

Ingredients
For crust
  Butter 1⁄4 Cup (4 tbs)
  Graham wafer crumbs 1 Cup (16 tbs)
  Packed brown sugar 2 Tablespoon
For filling
  Kiwi fruit 1 Small, peeled
  Eggs 3
  Granulated sugar 1 Cup (16 tbs)
  Lime juice 1⁄2 Cup (8 tbs)
  Grated lime rind 1 Teaspoon
  Butter 1⁄4 Cup (4 tbs), melted
  Cornstarch 2 Tablespoon
  Whipping cream 3⁄4 Cup (12 tbs)
  Kiwi fruit slice 4 (For Garnish)
Directions

Crust: In 9-inch (23 cm) pie plate, microwave butter at High for 35 to 40 seconds or until melted.
Add graham wafer crumbs and sugar; mix well.
Press evenly over bottom and sides of pie plate.
Microwave at High, uncovered, for 2 minutes.
Set aside.
Filling: In food processor or blender, process kiwi until smooth; transfer to 4-cup (1 L) measure.
Whisk in eggs, sugar, 1/3 cup (75 mL) of the lime juice, lime rind and butter until smooth; microwave at Medium (50%) for 6 to 8 minutes or until thickened, whisking every 2 minutes.
Dissolve cornstarch in remaining lime juice; whisk into lime mixture and microwave at Medium (50%) for 2 to 4 minutes or until thickened, whisking every minute.
Let cool; refrigerate until chilled, stirring occasionally.
Transfer mixture to large bowl.
Whip cream until stiff and fold into lime mixture; spoon into prepared crust.
Refrigerate until set.
Garnish with kiwi slices.
