Chocolate Cheese Pie
|Graham cracker crumbs||1 1⁄4 Cup (20 tbs)|
|Light brown sugar||1 Tablespoon|
|Melted butter||1⁄4 Cup (4 tbs)|
|Semi sweet chocolate pieces||1 Cup (16 tbs)|
|Cream cheese||8 Ounce|
|Brown sugar||3⁄4 Cup (12 tbs)|
|Eggs||2 , separated|
|Whipped cream||1 Cup (16 tbs)|
Mix crumbled graham crackers with brown sugar and nutmeg and melted butter.
Butter 9-inch spring-form pan.
Press crumbs on bottom.
Chill in refrigerator.
Prepare filling: Melt chocolate over hot water.
Blend cream cheese in bowl with 1/2 cup brown sugar and salt.
Beat in egg yolks.
Stir in melted chocolate.
Beat egg whites until stiff.
Gradually beat remaining brown sugar into egg whites.
Fold into chocolate mixture.
Fold in whipped cream and vanilla.
Pour into graham cracker crust.
