Louella's Buttermilk Cheese Pie
|Unsalted butter||1⁄2 Cup (8 tbs), melted and cooled (More For Greasing The Pan)|
|Double crust pie pastry||1⁄2|
|Granulated sugar||1 1⁄4 Cup (20 tbs)|
|All purpose flour||3 Tablespoon|
|Eggs||4 Large, lightly beaten|
|Buttermilk||1 Cup (16 tbs)|
|Fresh lemon juice||1 Tablespoon|
|Vanilla extract||1 Teaspoon|
|Ground nutmeg||1 Dash|
Preheat the oven to 400°F.
Lightly butter a 9-inch pie pan.
Roll out the pastry dough and fit it into the pie pan.
Mix the sugar and flour together in a large bowl.
Add the beaten eggs and mix well.
Add the butter and buttermilk and mix well.
Stir in the lemon juice, vanilla, nutmeg, and salt.
Pour into the unbaked pie shell.
Bake for 15 minutes at 400°F, then turn the oven temperature down to 350°F and continue baking for 35 to 40 minutes, or until browned on top.
Remove the pie from the oven to a cooling rack, and cool completely before serving.
