Pineapple Volcano Chiffon Pie

Ingredients
  Eggs 3 , separated
  Canned crushed pineapple 20 1⁄2 Ounce, crushed (1 Can)
  Water 1⁄2 Cup (8 tbs)
  Unflavored gelatin 2 Tablespoon (2 Envelopes)
  Sugar 1⁄2 Cup (8 tbs)
  Salt 1⁄4 Teaspoon
  Lemon peel 1⁄4 Teaspoon, grated
  Lemon juice 1 Tablespoon
  Graham cracker crust 1
Directions

MAKING
1) In a saucepan add egg yolks, undrained crushed pineapple and water.
2) Stir in gelatin mixed with 1/4 cup sugar and salt.
3) Cook and stir over medium heat for 5 minutes.
4) Take off from heat.
5) Add lemon peel and juice.
6) Let stand in refrigerator to chill and stir occasionally.
7) Beat egg whites until stiff peaks form.
8) Add remaining sugar and beat.
9) Fold in gelatin mixture.
10) Transfer mixture into baked Graham Cracker Crust.
11) Chill thoroughly.

SERVING
12) Top with whipped cream and crushed pineapple.
