Baxter Apple Pie
|Double crust pie pastry||1⁄2|
|Granulated sugar||3⁄4 Cup (12 tbs)|
|Brown sugar||1⁄4 Cup (4 tbs)|
|All purpose flour||1 1⁄2 Tablespoon (White Lily)|
|Apple pie spice||2 Teaspoon|
|Apples||5 Medium, peeled and chopped (Winesap, Granny Smith, Or Rome Beauty)|
|Vanilla ice cream||1⁄2 Cup (8 tbs) (For Serving)|
Preheat the oven to 375°F.
Lightly butter a 9-inch pie pan.
Roll out the pastry dough and fit it into the pan.
Refrigerate while you're making the filling.
Use an electric mixer to combine the butter, granulated sugar, brown sugar, salt, flour, and apple pie spice.
Add the eggs, one at a time, mixing well after each addition.
Remove the bowl from the mixer and stir in the chopped apples.
Pour the filling in the prepared crust then seal it.
Bake the pie for 30 to 35 minutes, or until the custard is set.
Remove the pie from the oven to a cooling rack, and cool completely before serving.
Serve pie slices with a scoop of vanilla ice cream.
