Pineapple Snowdrift Pie

Ingredients
  Vanilla wafers 1 1⁄3 Cup (21.33 tbs), finely crushed
  Sugar 3 Tablespoon
  Grated lemon peel 2 Teaspoon
  Butter 1⁄4 Cup (4 tbs), melted
  Vanilla ice cream 1 Quart
  Canned crushed pineapple 20 1⁄2 Ounce, well drained (1 Can)
  Shredded coconut 3⁄4 Cup (12 tbs)
Directions

GETTING READY
1) Preheat oven moderate to 350°F.

MAKING
2) In a saucepan mix vanilla wafer crumbs, sugar, lemon peel, and butter.
3) Spoon the crumb mixture into a 9-inch pie pan.
4) Press the mixture firmly on bottom and sides.
5) Chill for 30 minutes.
6) Alternately bake for 8 minutes.
7) Chill before filling.
8) In a bowl add ice cream and stir until soft
9) Mix pineapple and coconut into it.
10) Pour ice cream mixture into cold pie shell.
11) Freeze until set.

SERVING
12) Serve immediately.
