Zucchini Pie

Ingredients
  Zucchini 2 Cup (32 tbs), shredded
  Eggs 3
  Oil 1⁄2 Cup (8 tbs)
  Onion 1 Medium, chopped
  Mozzarella cheese 1 Cup (16 tbs), grated
  Biscuit mix 1 Cup (16 tbs)
Directions

GETTING READY
1. In a large mixing bowl, mix all ingredients well.
2. Preheat oven to 375° F.

MAKING
3. Into a pie plate, pour the mixture and bake for 25 minutes.

SERVING
4. Serve immediately.

TIPS
For variations, add mushrooms, bacon, ham or cooked meat.
