Raw Autumn Apple Pie

This raw apple pie is so easy to make, you will not believe it!! With my favorite season already here, the apples are ready to be purchased and eaten. The taste and consistency of this pie is so fresh and juicy...really good topped with a spoonful of plain organic yogurt and some shredded dark chocolate...mmmm....
Ingredients
  Raw cashews 1⁄2 Cup (8 tbs)
  Raw almonds 1⁄2 Cup (8 tbs)
  Medjool dates 8 , pitted
  Cinnamon 1 Dash (Fresh Ones)
  Sea salt 1 Dash
  Organic vanilla 1 Teaspoon
  Apples 3 , peeled and cored
  Medjool dates 3 , pitted
  Cinnamon 1 Teaspoon (Fresh Ones)
  Nutmeg 1⁄4 Teaspoon
  Lemon juice 1 Tablespoon
Directions

Directions for crust;

1.Place nuts, spices and salt into food processor and blend until well chopped into small pieces.

2.Add dates and vanilla until well combined. Mix is good when it sticks together when you press it with your fingers. It'll look crumbly but will pack together with gentle pressure. Add a couple of more dates if not sticking to your liking.

3.Press crust mixture in a pie plate. Place in fridge or freezer to firm up while you make the filling.

Directions for filling;

1.Chop apples into small chunks. Process the apples with the pitted dates, 1/2 tsp of the cinnamon and the nutmeg until well blended. Consistency of applesauce.

2.Pour into the crust and spread.

3. You can slice thin pieces of apples and add to topping of pie. Sprinkle 1/2 tsp. cinnamon on top.

Chill for an hour and then serve. Serves 8.
