Breakfast Pork And Apple Pie

Ingredients
  Tart cooking apples 6 Large, peeled, cored, and thinly sliced
  Soft maple sugar 1 Cup (16 tbs)
  Pepper 1⁄4 Teaspoon
  Ground cinnamon 1 Teaspoon
  Ground ginger 1 Dash
  9 inch 2 crust pie pastry 1 (Unbaked)
  Salt pork 1⁄2 Pound, diced
Directions

Mix apples with sugar and spices.
Line 9-inch pie pan with pastry.
Arrange apples in pastry and sprinkle with salt pork.
Top with remaining pastry, seal edges, and cut vents.
Bake in preheated hot oven (450°F.) for 10 minutes.
Reduce heat to moderate (325°F.) and bake for 1 1/4 hours longer.
