Breakfast Pork and Apple Pie
|Tart cooking apples||6 Large, peeled, cored, and thinly sliced|
|Soft maple sugar||1 Cup (16 tbs)|
|Ground cinnamon||1 Teaspoon|
|Ground ginger||1 Dash|
|9 inch 2 crust pie pastry||1 (Unbaked)|
|Salt pork||1⁄2 Pound, diced|
Mix apples with sugar and spices.
Line 9-inch pie pan with pastry.
Arrange apples in pastry and sprinkle with salt pork.
Top with remaining pastry, seal edges, and cut vents.
Bake in preheated hot oven (450°F.) for 10 minutes.
Reduce heat to moderate (325°F.) and bake for 1 1/4 hours longer.
